I did think about adding another form (construct or outsider) but thought I might prefer keeping the tighter focus for better DC for when elder evils come in.
But I think I saw a post forecasting more LL runs before paragon runs, so maybe another form isn't a bad idea.

No they don't. And most chests that you want to open also require you to disarm a trap first. And disarming a trap with a DC above 35 requires a rogue class level.
Of course there is nothing stopping you from being an elf, splashing a rogue level and then maximizing both open lock and disarm trap. But I also don't know if you can use those abilities while being shifted.

Cube, by far. For starters the cube can attempt twice around and checks against reflex. Lizard doesn't have impressive AB, so his disarm feat doesn't land that often, but it can be done as a free action while attacking once per turn.

I'd recommend swapping Epic Skill Focus (Parry) for Epic Reflexes, on build 1. Also drop CW for Listen on build 1. On both builds, you should substitute Blindfight and/or Toughness for WF, GWF or IC Unarmed. Or even combat casting (more on that later*)
Having WF, allows ranger level to earn EWF (+2 ab) instead of EP (+1). Alternatively*, ranger can get Improved combat casting as an epic bonus feat, if you take combat casting in pre-epic.
As for the last feat, in paragon levels, a LFF Undead 1 is really interesting (assuming the build 2). Other options include: 1 - LFF Humanoid 1, to decrease fort/reflex saves with kobold's trap & reduce immunities, with lizard whip (require EWF for adequate results). 2 - Leg Spell Penetration (both options would free up an epic feat - EWF, EP, Epic Reflexes or even ESF are adequate options in that case, or even the *)

Build 1 is really Ty's baby. I could edit it *for* him but I think he likes it to some degree as is, so I updated my alternative below. As far as the last feat I did take LFF humanoid with the first version of the build and took EWF. It's interesting occasionally, with quick rez and restore, but those two abilities take so long on shifting I didn't really find them worthwhile. Legendary spell pen is tempting but spell based abilities get used so rarely it hardly seems worthwhile to just get a few more points.
Also added some info about the outsider forms.
