Is there a player tracked somewhere? Since Steam version is not supported, I don't mind spending another $20 on GOG version, if the player count makes it worth it.

There will be people. I'd say 5-10 active nightly players. Which may sound low but you'd be able to get runs in every night and do things. Multiboxing (players playing more than 1 client / character at a time) provides a lot of flexibility.

GoG does sales for NWN:EE fairly frequently. It seems to come up every couple months or so. When it does, it usually goes for $5-6. Unless you're in a huge rush, just wait until a sale and save ~75%.
Also, just to be clear, it's not that "Steam version" isn't supported; it's that Enhanced Edition itself (whether from Steam or GoG) isn't compatible with HG (well, for 3 more days, anyway).
This is a 1.69 server, not a NWN:EE server. When you play HG, you're playing the original "Diamond" version of NWN, not EE.

Thanks, that's a good tip. It's weird that GoG provides Diamond keys and Steam doesn't.
