There's nothing wrong with deciding that you want to play XXX char that evening. Just realize that you've decided you want to do that, and don't worry about the raids you're missing, or that you can't go on.
IMO, you should designate one char as your raid character, and concentrate your best gear on him to make him as viable for raids as possible. One level 55ish char who can cover what's needed for 3-4 different raids is better than 2 level 50ish chars who can cover one raid each, and only part of what's needed for that third raid. Not only will that single character survive more, but soon you'll find him at the point where you don't need to play him anymore except on raids, because the xp from those raids will take him to 60 before you know it.
In addition, you'll find that after a while he starts getting gear that he can't use, but your other chars can, or that you can trade for gear for your other chars. He becomes a rich mafia uncle - he gives and he gives, but if there's something that he wants that would improve his raid performance, he takes it.
